These quick and simple saucy ramen noodles are packed with bold flavor and come together in just minutes! Perfect for an easy lunch, late-night craving, or when you need comfort food fast.

Directions:

  1. Break apart the ramen noodles and discard the seasoning packet; set the noodles aside.

  2. In a small bowl, combine the cornstarch with 2 tablespoons of water and set aside.

  3. In a small saucepan, whisk together all the sauce ingredients. Bring the mixture to a boil, then reduce the heat to low. Stir in the cornstarch mixture and simmer, stirring frequently, until the sauce thickens, about 2–3 minutes. It should be thick enough to coat the back of a spoon. Adjust seasonings to taste if needed. Remove from heat, cover, and set aside.

  4. Meanwhile, in a medium pot over high heat, bring 6 cups of water to a boil. Add the ramen noodles and cook for about 2 minutes, until they are just tender but still slightly chewy. (They will finish cooking in the sauce.)

  5. Drain the noodles and return them to the pot. Pour the prepared sauce over the noodles and toss to coat thoroughly.

  6. Set the pot over medium-high heat and cook for about 3 minutes, stirring often, until the sauce is slightly absorbed and the noodles are tender.

  7. Garnish with sesame seeds and chopped scallions, if desired.
