Recipe:
For the Chicken Marinade:
1 pound of boneless, skinless chicken breasts (or thighs for more juiciness) |
2 tablespoons soy sauce (low sodium recommended) |
1 tablespoon sesame oil |
1 tablespoon honey (or maple syrup for a vegan option) |
1 tablespoon rice vinegar |
2 cloves garlic, minced |
1 teaspoon fresh ginger, grated |
Salt and pepper to taste |
For the Bang Bang Sauce:
1/2 cup mayonnaise |
2 tablespoons sweet chili sauce |
1 tablespoon sriracha (adjust to taste) |
1 teaspoon lime juice |
For the Skewers
Wooden or metal skewers (if using wooden, soak them in water for 30 minutes to prevent burning) |
Fresh vegetables (bell peppers, zucchini, or red onion for added color and nutrition) |

Directions:
-
Step 1: Marinate the Chicken
In a large bowl, combine all the marinade ingredients: soy sauce, sesame oil, honey, rice vinegar, garlic, ginger, salt, and pepper. Add the chicken pieces, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes. For maximum flavor, marinate overnight!
Step 2: Prepare the Bang Bang Sauce
In a separate bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Adjust the spice level to your preference. Set aside for serving.
Step 3: Assemble the Skewers
Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken pieces onto the skewers, alternating with your choice of fresh vegetables. This not only adds color but also enhances the nutritional profile of the dish.
Step 4: Grill the Skewers
Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).
Step 5: Serve and Enjoy
Remove the skewers from the grill and drizzle with the prepared Bang Bang sauce. Serve immediately, garnished with fresh herbs like cilantro or green onions for an extra pop of flavor.
