  1. Step 1: Marinate the Chicken

    In a large bowl, combine all the marinade ingredients: soy sauce, sesame oil, honey, rice vinegar, garlic, ginger, salt, and pepper. Add the chicken pieces, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes. For maximum flavor, marinate overnight!

    Step 2: Prepare the Bang Bang Sauce

    In a separate bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Adjust the spice level to your preference. Set aside for serving.

    Step 3: Assemble the Skewers

    Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken pieces onto the skewers, alternating with your choice of fresh vegetables. This not only adds color but also enhances the nutritional profile of the dish.
